Pumpkin Butter

Spreadable pumpkin pie - super simple and delicious! Also a great, affordable gift idea!


1 15 oz. can pure pumpkin (approx. 1 and 1/2 cups)

2/3 cup packed brown sugar
1/4 cup honey
1 Tbsp. lemon juice
1/4 tsp. cinnamon
1/4 tsp. pumpkin pie spice OR 1/8 tsp ground cloves 1/8 tsp ground nutmeg


Combine pumpkin, sugar, honey, lemon juice, cinnamon, and cloves in a medium saucepan.

Bring to a boil over medium-high heat; reduce heat to low. Cook, stirring frequently, for 25-35 minutes or until thickened.

Serve with bread, toast, oatmeal, pancakes, muffins... or just eat right off the spoon. Store in an airtight jar or container in the refrigerator for up to 2 weeks.
