Banana "Ice Cream"

So apparently when you process frozen bananas in a food-processor or blender, they take on the texture and consistency of soft-serve ice cream.. who knew?! It's the perfect way to satisfy dessert cravings in a healthier (also vegan!) way or just to have as a cool treat on a hot day. Enjoy indulging in this amazing "ice cream"!


Ingredients:

1-3 ripe bananas, cut into one inch chunks and frozen
1/2-2 tsp. vanilla extract (optional)

Directions:


Cut your ripe bananas into one inch chunks, place them in an airtight tupperware container and freeze. 


Once they are completely frozen, put them in a food processor or high-powered blender, such as a Vitamix. Pulse it a few times to get started, then blend on high speed for 2-3 minutes. At this point it will look like coarse bread crumbs and not at all like ice cream. 


Scrape down the sides of your food processor bowl or blender with a rubber spatula and add any flavoured extracts or other desired add-ins. Continue processing/blending for another 3 minutes. You will know it's done when the frozen mixture magically comes together all at once into a big scoop of what looks like ice cream. Transfer to a bowl and enjoy!


You could eat the banana ice cream on it's own (which is delicious) or add in things like: a Tbsp. of cocoa powder to make chocolate ice cream, a couple tsp. of vanilla or other flavoured extracts, cinnamon, melted peanut butter, other fruit, and sprinkles or other toppings. You could also make a healthier chocolate syrup by combining 2 Tbsp. agave nectar with 1 Tbsp. cocoa powder. This "ice cream" is pretty much a base for you to try out different flavours or toppings!
