Spinach and Chickpeas


I love everything about this dish! Not only is it a delicious vegetarian/vegan main dish, it's also healthy, super quick to make, and uses simple, everyday ingredients.

Ingredients:

1 Tbsp. extra virgin olive oil
1/2 small/medium onion, finely diced
1-2 cloves garlic, minced
2 small tomatoes, finely diced
1 Tbsp. red wine vinegar
1/2 tsp. ground cumin
1/2 tsp. paprika
1 can chickpeas, drained and rinsed
4-5 cups fresh spinach OR 1 block frozen spinach, thawed and squeezed of excess water
1 Tbsp. lemon juice
Salt and freshly ground black pepper, to taste
2 slices whole wheat bread, toasted and cut into cubes

Directions:

Heat the olive oil in a skillet over medium heat. Saute the onion and garlic for about 2-3 minutes. 

Add in the tomatoes, red wine vinegar, cumin, and paprika, and continue to saute for another 2-3 minutes. Add in the chickpeas, spinach, and lemon juice and cook for 8-10 minutes, until heated through. Season with salt and pepper to taste. 


While this is cooking, toast 2 slices of bread. Once they are toasted, cut the bread into small squares. 


Divide the cooked spinach and chickpeas between two bowls. Stir the toast squares into each bowl and serve immediately. Make sure you only put the toast in right before serving so that it stays crispy. Enjoy! (Makes 2 servings)
