S'more Cookies



These cookies are a definite crowd pleaser and I get rave review whenever I make them! They incorporate all of the delicious elements of a s'more into a chewy cookie, without the messiness! They are one of my favourite cookies because they look so cute and eating them reminds me of summers around the campfire.


Ingredients:

1 and 3/4 cups all purpose flour
1 cup graham cracker crumbs
1 tsp. baking soda
1 tsp. salt
1 cup (2 sticks) butter or margarine, softened
3/4 cup sugar
3/4 cup brown sugar
2 tsp. vanilla extract
2 eggs
2 cups miniature chocolate chips
1 1/2 cups mini marshmallows
2 milk chocolate Hershey bars, roughly chopped

Directions:

Preheat oven to 375 degrees F and place rack in center of oven. Line two sheets with parchment paper or spray with non-stick cooking spray.

With an electric or hand mixer, combine the butter and sugars until fluffy. Mix in egg and vanilla until combined. In a separate bowl combine the flour, graham crackers, salt, and baking soda.

Add the dry ingredients to the wet ingredients and mix well. Stir in the chocolate chips. Cover and place the dough in the freezer for about 20 minutes. This will keep the cookies from spreading too much while baking.

Drop by rounded tablespoon onto cookie sheets. Bake for 7-8 minutes, and remove from the oven. Push 3 to 4 marshmallows and a few pieces of a Hershey's bar into each cookie. Return to the oven and bake an additional 2-3 minutes until fully cooked. You have to watch these once they get in the oven because you don't want to over bake them. The Hershey bar pieces shouldn't melt completely and the marshmallows need to stay gooey and not crispy. This cookie is best if it's really chewy or even slightly undercooked. For a really chewy cookie I usually take a minute or two off the baking time, then leave them on the baking sheet for a few minutes after I take them out of the oven before transferring them to a wire rack to cool completely.
