No-Bake Strawberry Cheesecake


1 and ¼ cup graham cracker crumbs
¼ cup granulated white sugar
1/3 cup margarine, melted and cooled slightly
8 oz. (1 pkg.) cream cheese, softened
1 can Eagle Brand sweetened condensed milk
1/3 cup lemon juice
Fresh fruit for topping - I like to use strawberries. If you aren’t able to use fresh fruit then canned fruit pie filling also works well for a topping.


Combine graham crumbs, sugar, and margarine and press into an 8"x8" baking pan. Chill in the refrigerator.

With a mixer, beat the cream cheese, condensed milk, and lemon juice until smooth. Pour evenly over the chilled crust and smooth the top with a spatula.

Top with fresh fruit of your choice, or with canned fruit pie filling of your choice. If I use strawberries I will usually garnish with a chocolate drizzle or chocolate shavings. Serve cold. Store in the refrigerator.
