Chocolate Chip Oreo Cookies

A cookie inside a cookie may seem a little redundant, and maybe even overindulgent, but trust me that these are amazing and worth it! How can you go wrong by combining the two most classic cookies: chocolate chip and Oreo? This is one of my go-to cookie recipes and whenever I make them for a party or a potluck everyone goes crazy for them.

Ingredients:

1/2 cup (1 stick) butter or margarine, softened
6 Tbsp. sugar
6 Tbsp. brown sugar
1 egg
1 tsp. vanilla
1 and ¼ cup flour
½ tsp. baking soda
½ tsp. salt
11 Oreo Cookies, broken into pieces - To get pieces you can chop the cookies roughly on a cutting board or put all the cookie in a large Ziploc bag and smash them around
1 cup chocolate chips

Directions:

Preheat the oven to 350 degrees F and place rack in center of oven. Line two baking sheets with parchment paper or spray with non-stick cooking spray.

In a large bowl, beat the butter and sugars with an electric mixer until smooth and creamy. Add the egg and vanilla and mix until incorporated.

In a separate bowl, whisk together the flour, baking soda and salt. Slowly add dry ingredients to wet ingredients and stir to mix. Gently stir in the Oreo pieces and chocolate chips until just combined.

With an ice cream scoop or large spoon, spoon balls of dough onto the prepared baking sheets. Bake for 8-9 minutes or until cooked, but still soft. Let cool on baking sheet for about 3 minutes before transferring to a wire rack to cool completely.
