Chocolate Coconut Balls


These chewy, fudgey balls are a great nutritious and energy-boosting snack thanks to the dates and nuts inside! They are reminiscent of the chocolate snowball Christmas treats.

Ingredients:

3/4 cup raw almonds
1/4 cup raw walnuts
1 and 1/2 cup Medjool dates
1/4 cup cocoa powder
1 tsp. vanilla extract
1/2 cup shredded coconut
1/4 tsp. salt

Directions:

In a food processor, pulse the nuts until they are very small pieces. Remove the pits and roughly chop up the dates, then add them to the food processor along with the cocoa, vanilla, coconut, and salt. Continue to process on high for about 3-5 minutes until the mixture is well combined and sticky. If the mixture is too crumbly to stick together then add 1-2 more chopped dates. 

Pinch off 1-2 Tbsp. of the mixture at a time and roll into balls. Roll the balls in additional shredded coconut to coat the outside if desired (I did not do this with mine but it would make them more like the "snowball" treats). Store in an airtight container in the refrigerator or freezer.
