Oven-roasted Ginger Beets


I love beets! Slowly roasting them in the oven really brings out their natural sweetness and it's almost like you're eating candy. They are also a great source of iron!

Ingredients:

4 small beets or 2 medium/large beets
2 tsp. extra virgin olive oil
1 tsp. ground ginger
1/2 tsp. kosher salt
Pinch black pepper

Directions:

Preheat the oven to 400 degrees F and line a baking sheet with aluminum foil. Peel the beets and cut into 1" chunks. In a large bowl, toss the beets with the oil, ginger, salt, and pepper until they are coated. 


Spread the beets on the prepared baking sheet and roast in the oven for 40-45 minutes, stirring every 15 minutes, until the beets are tender. They may be a little blackened on the outside, but don't worry they aren't burned it's just the beet's sugars caramelizing.
