These cookie dough balls are the perfect way to satisfy a cookie craving without having to turn on the oven - and it's a raw cookie dough you can feel completely safe about eating! Using raw nuts, oats, and agave also make these a healthier and vegan version of traditional cookie dough that could even double as a post-workout snack. These would also be delicious in ice cream!
Ingredients:
2/3 cup raw cashews
1/3 cup oats
2 Tbsp. agave
1 Tbsp. maple syrup (or another Tbsp agave)
1 tsp. vanilla extract
about 1/4 cup chocolate chips or carob chips
Directions:
In a high powered blender or food processor, blend the oats and cashews until they are a fine powder or flour-like consistency. Add in the agave, maple syrup (if using), and vanilla then blend again until it forms a "dough." You may have to scrape down the sides of the blender/food processor and use your hands to combine it perfectly.
Add in the chocolate chips to your raw cookie dough and stir them in by hand. Transfer the dough to a countertop or work surface. If your dough is for some reason too sticky refrigerate it for half an hour and then try it again. Pinch off 1-2 tablespoons of dough and roll into balls. Store the balls in an airtight container in the refrigerator or freezer.
