Hot Spinach and Artichoke Dip



The recipe comes from my friend Jessica, who was always forced to bring this dip to any potluck or party when we worked together a few summers ago - and with good reason! This dip is sooo amazing! I would highly recommend making it for any social event or party; it will disappear in minutes. It is also pretty much a copycat recipe of the Spinach Artichoke dip at Boston Pizza! 

Ingredients:

12 oz. cream cheese (2 and 1/2 blocks)
1 can artichoke hearts, drained and chopped
1 Tbsp. garlic puree - You can add more if you like it really garlic-y
½ cup fresh parmesan cheese
1 block of frozen chopped spinach, thawed and drained
Shredded cheddar cheese



Directions:


Microwave the cream cheese until it is soft. Thaw and drain the chopped spinach. Drain and roughly chop the artichoke hearts.

Cook the chopped spinach and artichoke hearts in a saucepan over medium heat for about 10 minutes. Mix in the cream cheese, garlic puree, and parmesan cheese until well combined.

Put the prepared dip in a heatproof bowl, top with shredded cheddar cheese and melt the cheese in the microwave or oven. Serve hot with taco chips or pita chips.

  1. This is such a silly question, but what liquid are you boiling the spinach and artichoke hearts in if you've drained the hearts? The liquid from the frozen spinach? Or are you boiling in water, draining it and then mixing in the cheese, etc? I feel like such a dummy for asking! Can't wait to try this though. I've been looking for a good spinach dip that doesn't use mayo and I've always loved the BP dip.

  2. Hi! Thank you so much for asking - this is a great question not a silly one! My recipe directions are a little confusing, so I'm going to reword them now because boiling assumes that you have some type of liquid to cook in. Really you just need to heat the spinach and artichoke hearts in the saucepan to cook them, so there is no liquid other than what is released from the spinach and artichoke hearts as they cook. Once they are warmed then you add in the cream cheese and other ingredients. This is an awesome dip - I hope you enjoy it! :)

  3. Closer to Boston Pizza would be fresh spinach, microwaved with a tbsp of water to cook it, then mix cream cheese, bit of sour cream, bit of hot sauce, chopped artichoke hearts, bit of salt, and parmesean cheese. When preparing to serve, warm up the portion and give a good stir.

  6. Yup, I added a couple spoonfuls of sour cream - I remember the Boston Pizza recipe had that in it. I think it also had a dash of Worcestershire sauce in it (I added it to mine along with a squeeze of fresh lemon and it was amazing!)
