1 cup all-purpose flour
1 cup whole wheat flour
1 Tbsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. salt
2 apple cinnamon flavoured instant oatmeal packets
1/2 cup white sugar
1 tsp. vanilla extract
1/4 cup egg white
3 Tbsp. natural applesauce
1 and 1/4 cups unsweetened almond milk or skim milk
Preheat oven to 350 degrees F and lightly grease a muffin tin or fill with paper liners.
In a medium bowl, whisk together the flours, baking powder, baking soda, cinnamon, salt, instant oatmeal packets, and sugar.
In a separate bowl, combine vanilla, egg whites, applesauce, and milk. Slowly add the dry ingredients, mixing with an electric mixer until just combined. Do not over-mix or you will have tough, rubbery muffins.
Fill the prepared muffin cups about 3/4 full with batter. This recipe yields enough batter for approx. 14 muffins.
Bake for about 14-15 minutes, or until a toothpick inserted into the centre of a muffin comes out clean. Allow muffins to cool on a wire rack.
